Can you believe 11 years have passed since that fateful day? Like so many others I still cry when I  watch memorials on television or read newspaper articles about the victims and the loved ones they left behind.

It was only last year when it really hit me how much time has passed since that tragic day. Every year at my school we honor the victims of 9/11 in a special ceremony in the auditorium. Afterwards my students and I would have a discussion about 9/11. They were always eager to share their own stories of 9/11 with the class. Most had personal stories to share and knew someone who was there the day the towers crumbled.

However last year while standing in front of my fifth grade class I realized that none of those children were alive during 9/11. September 11th would be a story that they were told, not an event they lived through. Similar to my grandparents retelling stories of Pearl Harbor. This realization made me wonder.

Will they ever be able to appreciate the events of that day?

Will they ever really understand how scared we all were?

Will they ever know how we banded together as a city and a country?

I don’t really know the answers but I began to understand my role and how important it is to make sure that I continue to talk about 9/11 with my students. I want them to remember and honor the victims of that day. I want to teach them to always remember and never forget.

Since I am a teacher naturally I love books, so I was thrilled when I came across The Man Who Walked Between the Towers by Mordicai Gerstein. Every year I share this wonderful story about an amazing French street performer named Phillippe Petit. In 1974 when the towers weren’t quite yet complete Phillippe performed a daring high wire act. In the middle of the night dressed as a construction worker Phillippe snuck to the top of the south tower while his friends were making their way up the north tower. They strung a cable between the towers and Phillippe performed the most amazing tight wire performance of his life for the gawking New Yorkers below.

The book is so well written and has the most breathtaking illustrations. It helps the children understand what iconic structures the Twin Towers were.

But, what I love so much about the book is that it is a celebration of the towers and their history. The story is uplifting and serves as a beautiful memorial to the towers and lives associated with them.

At the end of the book I get choked up every time I read the last few lines which simply state

Now the towers are gone

But in memory, as if imprinted on the sky, the towers are still there. And part of the at memory is the joyful morning, August 7, 1974, when Phillip Petit walked between them in the air

Monday Mealtime… Raspberry Bars

Raspberry Bars

Today’s Monday Mealtime is an all time favorite of mine. It is my go to dessert to bring to someone’s house and I always get rave reviews! The credit for this recipe goes to my friend Kim O. She sent me the recipe years ago and I have been making them ever since.

Enjoy.

Ingredients:

  • Quaker Oats Oatmeal
  • Smucker’s Raspberry Preserves 18 oz
  • Butter
  • Brown Sugar
  • Flour
  • Vanilla

Directions:

  • Preheat oven to 350 degrees
  • Spray the bottom and sides of a 13X9 pan with a non stick cooking spray  (or butter whatever you prefer)
  • In a mixing bowl combine
    • 1 2/3 cups of flour
    • 2 cups of oatmeal
    • 2/3 cup of butter
    • 1 cup packed brown sugar
    • 1 ½ teaspoon vanilla
  • Mix the ingredients together with a hand mixer or stand up mixer (my Kitchen Aid might be one of my favorite kitchen appliances!)
  • Then take half the mixture and press into the bottom of the pan
  • Spread the entire jar of preserves over the bottom crust
  • Then sprinkle the rest of the oatmeal mixture over the preserves
  • Bake 35 minutes or until golden brown and bubbly

Tips

  • These can be really sticky when you cut them up. The best way I have found is to stick the pan in the fridge for 10 or 15 minutes. When they are chilled they cut into squared pretty easily.
  • They last a long time and are great for trips.

Summer Is Not Over Yet… Adventureland Fun!


Summer is not over yet…

There are still a few great things you can do before summer ends!

A family favorite of our is to visit Adventureland on 110 in Farmingdale, New York. My kids are huge amusement park enthusiasts. There is nothing they like more than a day at an amusement park. Rides and games are big at my house and the girls often ask to go to Adventureland. This is one request I really don’t mind granting. Adventureland is so much fun for the kids and reasonably priced. For only $23.99 you can purchase a Pay One Price Ticket for a bracelet for access to all the rides. A pretty good price considering the church fairs I take the kids to over the summer are $25.00 for a Pay One Price ticket and  cannot be compared to a legitimate amusement park like Adventureland. It really is a great bang for your buck.

All three kids are able to find rides to enjoy at Adventureland. With three daughters of such varying ages it is getting harder and harder to find activities they all enjoy. Adventureland is one place we can all go and have a good time and make great family memories.

There are definite height requirements and Amelia gets shut out of some of the bigger rides like the log flume and the big roller coaster. However there are plenty of rides just for her that her sisters are too big to go on. Amelia really likes that! The whole front of the park is basically dedicated to the smaller kids. There are great rides like the small swings, which is a miniature version of the big swings. They stand side by side which is great because the big kids can go on the regular swings and the Amelia can go on the little swings all at the same time.

The rides in the front are so cute and cater to the little ones.

Amelia has a great time on the cars, motorcycles, helicopters, and my favorite the little cars that go around the Eiffel Tower- a little bit of Paris in the USA.

There is also an adorable ladybug roller coaster in the middle of the park. All three kids can go on it together and they love it. My kids are seasoned roller coaster riders and they even go so far to pose for the camera when they ride the roller coaster. Of course then I am inclined to buy the picture because they are just too cute and funny with their hands up and their mouths in the perfect mock “I am enjoying myself so much” scream. I think they all have a real future as actresses in amusement park commercials!

For the big kids there is so much to do including a great roller coaster, log flume, bumper cars, haunted house, and antique cars. The antique cars are my favorite.

I remember loving them as a kid when my parents would take me to Adventureland. I would love to drive the antique cars I thought I was really driving a car! The track seemed so long then but now looking at it I can’t help but wonder if they have shortened the track over the years or maybe my memory is not as good as I think it is, which I am sure is the case.

To beat the heat there are plenty of water rides and you will get wet!! My kids wanted to know where we could buy towels after they got off the ride.

Of course no park experience would be complete without food and treats. The food is pretty decent and the prices are good. I assumed the first time I went with my kids that it would be a typical amusement park price gouge and I would have to pay $15 for chicken and french fries, but that was not the case at all.

They even have a cup you can purchase and refill for 99 cents for the rest of the season. I am a sucker for refillable souvenir cups and can’t resist purchasing one. Naturally the next time I go I won’t be able to find the cup but the fact that I can purchase a drink for only 99 cents compels me to buy it anyway.

Adventureland is a great place for families and your kids will have a great time.  I hope we can squeeze in one more trip before the weather gets too cold. I just hope no one asks me where the refillable cup is…

Traces… not your typical circus!

Summer is not over! Summer is not over! Summer is not over!

I can say it three times and click my heels but it’s not going to change the fact that the clock is ticking and summer is dwindling away. In my effort to find fun and exciting ways to enjoy the last few days of summer, my husband and I found ourselves at the Show Traces Monday night.

My husband and I were blown away by Traces. It was an amazing show that kept us riveted for 90 minutes. From the explosive show opener to the exciting closing I was on the edge of my seat the entire time. The high-flying acrobatics and the death defying stunts left me “Oohing and aaahhing” the entire show.

For those of you who don’t know Traces is a circus performance, but like no other circus you have ever experienced. There are no clowns, three rings, or animal acts but rather a fusion of contemporary dance, acrobatics, theatre, poetry and music. It’s like the circus all grown up with lots of gritty raw emotion.

The performers are dynamic and you are immediately drawn into the show. It is thrilling to watch as they flip around the stage with such physical agility and at the same time they are both real, heart felt and funny. I loved watching the performers jump, dance, and flip about the stage with such ease.

Traces has a gritty street performance feel that I really enjoyed. The show has many levels. There are the stunts with pure physicality but at the same time the performance also has lots of emotion and at time is both comical and sensual. And I would be remiss if I didn’t also point out that the male performers are gorgeous! Not too dismiss Valerie the only female performer who is a terrific performer and her strength and agility is awe-inspiring.

You can see Traces at The Union Square Theatre, 100 East 17th Street (between Park Ave South and Irving Place), but hurry it’s closing September 2nd!

Monday Mealtime… BBQ Chicken Quesadilla

Today’s Monday Mealtime Recipe is BBQ Chicken Quesadilla. This is a really simple recipe and requires only a few ingredients. It is a big fan favorite and I sometimes make it as an appetizer.

Ingredients:

  • 1lb Perdue Chicken Breast (I prefer thin sliced)
  • Sargento Cheddar Jack Cheese Mix 8 oz
  • Olive oil
  • Fajita Shells
  • Jack Daniels BBQ Sauce Original #7

Directions: 

  • Cut the chicken into strips and cook in a frying pan over medium high heat with a little Olive Oil. Cook until the chicken turns white, about five minutes.
  • Pour 1 cup of Jack Daniels Barbecue Sauce into the frying pan
  • Cook for an additional five minutes
  • I have a quesadilla maker I use to prepare quesadillas but you can also make them in a frying pan
  • If you have a quesadilla maker:
    • Put one fajita shell in the bottom.
    • Place a scoop of chicken in the center top with a dollop of BBQ sauce and a handful of cheese. Be sure to put the ingredients in the center because they will spread out the sides. If you put the ingredients to close to the edges you will have a huge mess on your hands.
    • Place the second fajita shell on top and close the quesadilla maker and let cook for about two minutes. Shell will be golden brown and cheese will be melted when it is ready.
    • Be careful taking the quesadilla out it will be hot!
  • If you do not have a quesadilla maker you can use your frying pan
    • Coat the pan with a little olive oil or non-stick spray.
    • Put one fajita shell in the pan.
    • Place a scoop of chicken, some barbecue sauce, and a handful of cheese on top of the fajita. Spread all the ingredients out evenly over the shell.
    • Put another shell on top and cook on medium low heat for a minute or two then flip and cook on the other side.
    • Quesadilla is done when the shell is golden brown and the cheese is melted
  • Tips for cutting the quesadilla- use a pizza cutter!
  • Enjoy!!
